HM Gin is a father-and-daughter distillery built on curiosity, experimentation and a willingness to do things differently. Gavin and Amy Shaw began distilling together in Plenty during Melbourne’s 2020 lockdown, combining Gavin’s chemistry background with Amy’s instinct for flavour and balance. They rarely make the obvious. Their evolving range has included French oak-aged gin, Seven Spice Chai, Six-Eyed Scorpion Chilli and even a tiny-batch anise gin inspired by sambuca. Some are classic, others wonderfully weird, but there is always serious technique behind them. HM has since collected major national awards, including Australia’s Best London Dry in 2023 and Best Contemporary Gin for Seven Spice Chai in 2024 and 2025. Amy returns to MWB to take us further into the strange, experimental world she and her dad continue to create.
